Ecco is tucked deep inside one of Costa Mesa's bohemian retail centers, The Camp. "The pizza is wood-fired and made with Caputo flour, and the result is top-notch. The Ecco pizza mixes crushed San Marzano tomatoes, small bits of squash, red onion and tender squash blossoms with luxurious burrata. It's a fine recipe, but the crust is what matters — chewy yet crackly, it's one of Orange County's better pies!
Orecchiette Salsiccia-a big bowl of delicate ear-shaped pasta with crumbles of sausage, grana padano, Swiss chard and basil. Olive oil combines with juices from the pork and mushrooms to form a savory broth.
Best of all might be the half-chicken served with braised kale and cannellini beans. The boneless cut is marinated in all sorts of herbs, then grilled above charcoal and wood, imparting a wicked caramelization.
All of this is served by youthful staffers who combine casual chit-chat with proper service, quickly changing out used plates and utensils and re-folding napkins if diners step away for a moment.
Ecco, by the way, is a word used colloquially Italian to mean, "Here it is." And I have to say, it is very good!"
